David Koretz of Plum has developed a high-tech wine appliance to serve wine at the perfect temperature and save it for days or weeks in its bottle-opening state. A successful entrepreneur of Silicon Valley, David gathered a tech team, including top engineers from Google, Amazon’s Lab126 and Motorola in 2015, along with his love of wine and moved to Miami. After a couple of years of development his team at Plum (plum.wine) recently introduced the first appliance that identifies, preserves, chills and serves wine by the glass. Anyone with a wine collection (20 million or so) or consumers who live alone or in split households (one prefers red, the other white) is the market for this luxury consumer product.


Plum Wine

Install any two bottles into the appliance and a motorized needle pierces the foil and any closure, cork or metal, pressurizes the bottle and sucks the wine out without introducing oxidation. Cameras connected to a computer photograph each label, identify the vintage, varietal, region, winery and wine and automatically chill it to the perfect serving temperature. The contents are preserved with argon gas (an integrated, refillable argon canister preserves up to 150 bottles). On a 7-inch touch screen, Wi-Fi capabilities allow Plum to offer tasting notes, such as a video of the wine maker sharing his thoughts.
